Our signature sirloin steaks are sourced from grass-fed cattle from British and Irish farms, from native breeds including Aberdeen Angus, Hereford, Longhorn and more. We specially select the beef based on the excellent quality and marbling, and then expertly dry-age the beef for 28 days on the bone in a specially built dry-ageing chamber.
The process of dry-ageing not only develops the flavour of already fantastic beef, but the enzymes in the beef start actively breaking down the connective tissue in the muscle, resulting in an extra tender, extra tasty steak.
Sirloin steak has little fat, but there’s just enough to baste the meat when cooked to create a delicious, buttery texture that melts in the mouth.
Each steak is handpicked, cut and prepared to order by our expert team of butchers.
